First thing's first, I'm not wrestling anymore but I'm not out of the wrestling industry. I've become more or less a booker/promoter in training. I'm still with the indy company I was with before just now instead of wrestling, I'm booking. The promoter usually has me book the less main storyline driven parts of the show, which is fine by me. I'm going to eventually be opening my own company, if I can get it funded through Kickstarter or if I can get a loan. If you want to pledge for Kickstarter, let me know and I'll get you the link.
Non-wrestling wise, my inner nerd has overcome me more than ever and I've picked up the YuGiOh and Pokemon Trading Card Games competitively and looking to get a sponsor soon in the former... still rookie level in the latter. Also, I've started working for an online card shop that allows people from all walks of trading card games to go and buy in bulk.
I also finished college and am now a certified chef.

Sounds like a pretty busy life mate! I think the booking / promoting side of wrestling always interested me as much as the physical aspect too, basically using your creativity to drive the company forward - all the best of luck with that one!
I've done cheffing before too, and that ain't easy haha the majority of the grey hairs on my head nowadays come from either being a new father or my days as a chef, very rewarding when you can send out some good stuff on big orders etc though.
The trading cards are something I've literally just picked up again in the last few days, but at the moment my budding collection focuses on football - I'm on the Euro 2016 set at the moment, and will move on to next season's Premier League collection once that's completed. Never really played with the Pokemon or YuGiOh stuff though, be good to hear more about that.

The booking/promoting side, as I'm learning, is a bit more frustrating than trying to get yourself over as a worker, but it's not something I'm going to miss out on doing. For example, instead of deciding which move you and your opponent will do at certain points in the match, I have to decide who works great with who while also not totally overshadowing the main event which can be quite the trick. I've recently just been allowed the green light to book a cage match for the mid-card, but I've got 5 months to build up to it. On the bright side, if this goes well then the promoter said he'll consider adding in the tag division for my list of duties. Also, the door's open for me to get in the ring if I need to.
As for card games, YuGiOh takes up most of my competitive appearances because I've gotten to the point where I can hit the top 16 of my region. Pokemon I just picked up a few months ago casually and competitively about 2 weeks ago. YuGiOh's gotten so complicated yet still exciting that it's become impossible to put down. If I'm not playing with cards in real life, then I'm using one of three computerized games that all have every card in their database to build and play/test the decks I want to use in real life. My next competition for YuGiOh is coming up in April, so I have time to build, test, and if a new forbidden list comes out then adjust so that I can go in as confident as possible.

Honestly, while I was watching the anime (First season, cause why would I watch anything else?) I had a thought of getting back into it, but realized that I had no clue what XYZ and Synchro summon even was, nor would I be able to get any friends into it with me.

I had a thought of getting back into it, but realized that I had no clue what XYZ and Synchro summon even was, nor would I be able to get any friends into it with me. They're both just newer versions of fusion really. The more complicated mechanic right now is Pendulums, which have become quite the bullshit but also the most awesome mechanic when done in your favor. I haven't watched the anime since they had the like dueling school or whatever, but I've kept up with playing. Also, there are ways to play on the computer and what not. I frequently use the site Dueling Network to go duel, and I tell a lot of my friends to go there too so they can build and practice their decks.
